Spicy Ground Turkey and Zucchini Stir Fry

I'm always looking for new, healthy, and yummy looking recipes -- and about a month ago, I stumbled upon a recipe for "Spicy Ground Pork & Zucchini Stir-Fry." Whilst I stayed fairly faithful to the recipe, I did swap out ground pork for ground turkey in an attempt to make the dish healthier. 

I'm happy to report that not only was this dish crazy easy to make, it was super yummy. A great recipe for a weeknight after work/school. Will be making this again soon!

Ingredients:
- 3 tbsp soy sauce
- 1 tbsp grated fresh ginger
- 1 tbsp Sriracha
- 2 tsp sesame oil
- 1 lb zucchini, chopped into bite sized pieces
- 2 tbsp vegetable oil
- 1 lb ground turkey
- salt, to taste
- ground black pepper, to taste
- rice (optional, for serving)


Directions:
1. Prep the zucchini by dicing it up into bite-sized pieces. I like to then soak the zucchini in salt water -- this removes any bitterness.

2. Make the sauce by mixing the soy sauce, fresh ginger, sriracha, and sesame oil.

3. Sauté the ground turkey in a frying pan or wok. Once cooked, place meat in a separate bowl. 

4. Heat oil in wok and cook zucchini until soft. 

5. Once zucchini is cooked, return ground turkey to the pan.

6. Add sauce to zucchini and ground turkey -- mix well. 

7. Once everything is mixed together, serve hot and enjoy!
