Quinoa Pizza Casserole
Recently, I have been craving pizza, but since I am trying to be healthy, I have not been indulging this craving. I was looking online for some cool new recipes and stumbled upon this one. I thought, "hey, this looks delicious and quite healthy!" and you know what? It is exactly that! This delicious casserole is healthier than pizza, but tastes identical. Seriously.
It is also super easy to make! It is a great weeknight dinner or something to make on a weekend that can then be packaged and frozen for later. (That's what I did). Either way, if you and/or your family loves pizza, but you too are trying to eat healthy, I highly recommend this recipe!!! It is really filling and I think you will be very satisfied. Who said healthy food had to taste bland or gross?
Ingredients:
- 1.5 cup dry quinoa
- 1 medium onion, chopped
- 1 pepper, chopped (I chose orange, but you can use any color)
- 8 oz sliced mushrooms
- 3 tomatoes
- 1 package fresh spinach
- fresh garlic, chopped
- 1 jar tomato sauce
- 1 container ground turkey (you can use other meat)
- 1 cup frozen corn
- 1 tbsp basil, chopped
- seasonings of your choice
- 1 bag shredded mozzarella cheese
Directions:
1. Preheat oven to 375F.
2. Cook the quinoa in boiling water. (3 cups of water).
Cook for about 15 ~ 20 min or until fully absorbed.

3. Chop up the onions, peppers, and mushrooms.
4. Chop up the tomatoes.
5. Prepare the marinara sauce.
6. Saute the peppers, onions, and mushrooms. Cook until soft, put off to side.
7. Saute the ground turkey meat. Sauté.
8. Mix the vegetables, marinara sauce, quinoa, and turkey.
9. Mix in some of the cheese and seasonings.
10. Add the tomatoes and spinach.
11. Once everything is mixed together, put the mixture into a prepared baking dish. Top with remaining cheese.
12. Bake in the oven for about 20 - 30 minutes.
